These anchovies are prepared fresh and by hand. Anchovies are fished from the Mediterranean Sea and after being prepped are aged for six months in wooden barrels resulting in a firm and flavorful product. The anchovies are packaged in a glass jar with olive oil. Full respect of the time-honored artisans’ traditions are maintained throughout the entire process.
