The sweet one — but don't mistake sweet for soft. Peaches and apricot in syrup lay down a jammy, orchard-ripe base, then banana and serrano peppers walk in behind it with a slow, building warmth. Apple cider vinegar and lime keep the whole thing bright instead of cloying, while Worcestershire and garlic pull it toward something savory and grown.

This is the bottle for grilled pork, wings, roasted carrots, and anything coming off a charcoal fire. Spoon it over cream cheese with crackers and watch it disappear.
