Goat Cheese & Green Apple Stuffed Pork Chops

4 boneless pork chops
2 tablespoons Gradassi "Fiore d'Autunno" Unfiltered Extra Virgin Olive Oil
2 teaspoon of Chilean Etnia Merquen Smoked Chili Pepper
Salt and pepper to taste

For Filling:
3 Granny Smith apples
6oz of plain goat cheese
2 tablespoon of apricot preserves


1. Preheat oven to 350 degrees, cut lengthwise into each pork chop to create a pocket, do not cut all the way through. In a medium size baking dish season pork chops on both sides with salt and pepper. Coat pork chops with olive oil and give it a nice rub.

2. For filling: In a medium bowl mix chopped Granny Smith apples, goat cheese and apricot preserves.

3. Spoon the apple filling inside the pockets of pork chops. Sprinkle Merquen chili flakes on face side of pork chops. Cover with foil and place in oven for about 30 minutes. Uncovered the last 10 minutes. Remove from oven and serve with choice of vegetables. Add Merquen Man Candy bacon on top of stuffed Pork Chops and Serve. Enjoy!
