Greek Yiros Wraps with Marinated Lamb and Hummus

400g (approx. 14oz) stir fry lamb pieces
Henry Langdon Tunisian Tabil
1 pkt pita bread
1 tub tzatziki
1 tub hummus
2 cups baby spinach leaves
6 tomatoes, diced
1 bunch spring onions, finely sliced
1 lemon
Time: Prep time 10 minutes, cook time 10 minutes

Place the lamb, Henry Langdon Greek Yiros, lemon juice and lemon carcass into a zip lock bag and shake well to ensure the lamb is evenly coated. Place the bag in the fridge for at least an hour to marinate.
Before cooking the lamb, remove the lemon carcass. Fire up the BBQ so it is nice and hot, then add the lamb, cooking in small batches.
While the lamb is cooking, place a pita onto the BBQ hotplate and cook, turning after 1-2 minutes.
Place the cooked pita onto a plate and spread with hummus. Add some spinach leaves, tomato and lamb then top off with a dollop of tzatziki and a handful of spring onions.
Roll the pita around it all and enjoy!
